Tostadas

A tostada is a crisp-fried tortilla, and these days they come in a wide array of sizes and contours: tiny two-bite rounds, diamond and triangle shapes, squares from small to large, the standard 5-inch disk. And lately no-fry, baked tostadas are storming the market; just recently, in Uruapan, Michoacan, I tasted a baked tostada made with sesame paste that was way better than good. Usually, baked tostadas are made from specially formulated tortillas that have a little oil in the dough, helping them toast crisp and tender, rather than hard. Making beautifully crisp baked tostadas at home depends on your finding just the right tortilla; out of twelve we tried only one was passable. My suggestion: buy the oven-baked ones or fry your own.
